Stone Fruit Crisp with Oatmeal Crumb Topping


  • 8 cups sliced and pitted peaches, plums and cherries
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon grated lemon or orange zest
  • 2 tablespoons fresh lemon or orange juice
  • ¼ teaspoon salt
Oat Topping:
  • 1 cup old fashioned oats
  • ⅓ cup flour
  • ¼ cup light brown sugar
  • ½ teaspoon salt
  • ½ cup butter


Preheat the oven to 375°F

Mix the fruit with the sugar, cornstarch, zest, fruit juice and salt. Pour the mixture into a 2 QT baking dish.

Mix the topping ingredients together in a medium bowl, cutting in the butter with a pastry cutter or mix it in with your hands, squeezing until crumbly. Scatter the oat topping over the fruit and bake it for 1 hour until the fruit is bubbling and the topping is golden.
