- 4 sweet potatoes, peeled
- 4 cups vegetable oil
Spiralize the sweet potatoes onto a clean work surface.
Preheat the oven to 300°F. Line a baking sheet with paper towel for draining.
Heat the oil in a 5 QT Dutch oven to 350°F. Working in batches, carefully drop about a cup of the sweet potatoes into the oil at a time. Fry for about 3 minutes or until the potatoes are golden and crispy. Remove the fries from the oil with a slotted spoon or spider and drain them on paper towels. Season the fries immediately with salt.
Keep the fries warm in the oven while you continue to fry the remaining potatoes. Make sure your oil remains hot or the fries will soak up too much oil and be soggy.
