Spiced Carrot Spread with Grilled Pita


  • 1 pound carrots, peeled and cut into coins
  • 1 clove garlic
  • ½ teaspoon cumin
  • 1 teaspoon fresh grated ginger
  • ¼ teaspoon cinnamon
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • Salt
  • Pepper
  • ¼ cup olive oil
  • 6 pieces of pita bread, grilled and cut into triangles


Place the carrots in a 3 QT SmartSteam™ and add a few inches of water. Bring the water to a boil, cover and simmer until the carrots are tender, about 10-12 minutes.

Drain the carrots and add them to the food processor along with the remaining ingredients. Process the mixture until smooth, seasoning with additional salt and pepper. Garnish with mint and serve with grilled pita bread.
