Quinoa Breakfast Bowl with Pico de Gallo

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 teaspoon salt
  • 1 cup pico de gallo
  • 4 eggs
  • 1 cup shredded cheddar
  • Cilantro

Instructions

Mix the quinoa with the water and salt in a medium saucepan. Cook it over medium-high heat until the mixture begins to boil. Lower the heat and simmer for about 15 minutes until the water is absorbed and quinoa is tender.

Meanwhile, cook the eggs according to your preference. Sunny side up, over easy, scrambled etc.

Place a ½ cup of quinoa each into four bowls. Top each bowl with an egg, a scoop of pico de gallo, shredded cheddar and fresh cilantro.
