Philly cheesesteak baked potato

Philly Cheesesteak Stuffed Baked Potatoes

  • 4 medium baking potatoes
  • 2 tablespoons olive oil, divided
  • 1 pound top sirloin steak
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • 1½ cups shredded mozzarella cheese
  • Salt
  • Pepper

Pour 1 tablespoon of oil, the Worcestershire sauce and the soy sauce into a medium sized bowl. Slice the sirloin into ½-inch strips and place it into the marinade.

Preheat the oven to 400°F. Prick the baking potatoes a few times with a fork and place them in the oven for 1 hour, or until they are soft.

Heat 1 tablespoon of oil in a large skillet over medium heat. Sauté the peppers and onion until they are softened, about 10 minutes. Season them with salt and pepper and set them aside while you prepare the steak.

Remove steak from the marinade and season it with salt and pepper. Heat a large skillet over medium-high heat. Add the steak to the pan and cook until the outside is browned and the inside is done to your liking.

Cut each potato down the center and open it so that you can stuff the center with the cheesesteak ingredients. Spoon a portion of the veggies and the steak into each potato. Top each potato with a generous amount of cheese. Place the potatoes on a baking pan and put them back into the oven for about 6-8 minutes, or until the cheese is melted.
