- 1.5 ounces North Shore Gin (or other herbaceous gin)
- .5 ounce St. Germain
- .5 ounce thyme simple syrup (recipe included)
- .5 ounce fresh lemon juice
- .75 ounce fresh grapefruit juice
Thyme Simple Syrup:
- ½ cup sugar
- ¼ cup water
- 8 sprigs fresh thyme
For the simple syrup, combine the ingredients in a 1 QT saucepan and bring the mixture to a boil. Lower the heat and simmer until the sugar is dissolved. Set the pan aside and allow it to cool.
Place a few ice cubes into a cocktail shaker and add the cocktail ingredients. Shake for about 15 seconds and strain the cocktail into a glass. Garnish with a thyme sprig and enjoy.
