- ⅓ cup orange juice
- 1 teaspoon fresh orange zest
- ¼ cup lime juice
- 4 garlic cloves, chopped
- ½ teaspoon cumin
- ½ cup cilantro, roughly chopped
- 2 tablespoons mint, chopped
- 1 tablespoon fresh oregano
- ½ teaspoon salt
- ¼ teaspoon pepper
- 4 boneless, skinless chicken breasts
Combine all of the ingredients into a bowl except for the chicken. Whisk until they are combined. Add the chicken and cover it with plastic wrap. Marinate the chicken in the refrigerator for 2-4 hours. Do not go longer, or the acid in the citrus will start to cook the chicken.
Remove the chicken from the marinade.
Heat a grill pan over medium-high heat. Place the chicken onto the hot pan. Grill for about 5 minutes or until nice grill marks are achieved. Turn the chicken over, add about a ¼ cup of water to the pan and cover it with the lid. Continue to cook the chicken until it is cooked through and caramelized on the outside.
Mojo chicken is excellent on its own, in tacos, on a sandwich or even made into shish-kabobs.
