Mini Denver Omelettes


  • 12 large eggs
  • 12 pieces of deli ham
  • 1 cup shredded cheddar cheese
  • ½ cup scallions, sliced
  • ½ cup red pepper, finely diced


Preheat the oven to 350°F.

Using a standard size muffin tin, line each cup with a slice of the deli ham.

In a large bowl, crack the eggs and whisk them together. Add in the cheese and vegetables, whisking to combine.

Pour the egg mixture into a large measuring cup with a pour spout, or use a ladle to fill the ham lined muffin cups. Fill each cup about three-fourths of the way full.

Bake the egg cups for about 25 minutes, or until the eggs are set.
