Amy’s Homemade Spaghetti and Meatballs

  • 1 pound spaghetti or other pasta
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 onion, grated
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 egg
  • 2 tablespoons ketchup
  • ¼ cup chopped fresh parsley
  • ¼ cup grated Parmesan cheese
  • ½ cup seasoned breadcrumbs
  • 1½ teaspoons salt
  • ½ teaspoon pepper
  • 2 tablespoons olive oil
  • ¼ pound pancetta, cut into small chunks
  • 1 small onion, diced
  • 3 cloves garlic, chopped
  • 28 ounce can crushed tomatoes
  • 2 teaspoons sugar
  • ⅛ teaspoon crushed red chili flake
  • ¼ cup fresh basil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup grated Romano cheese

For the Meatballs:

Combine all of the ingredients for the meatballs in a large bowl using clean hands. Shape the meat mixture into 2-inch balls. Drizzle a tablespoon of olive oil into a 5 QT SmartSteam™ or nonstick sauté pan. Heat the pan over medium heat. Add the meatballs to brown them, but be careful to not overcrowd them. You will have to brown the meatballs in two batches. After the meatballs cook for about 4 minutes, turn them over to cook on the other side. Cover the pan with the lid, opening the steam valve. Cook them for another 4-5 minutes until the meatballs are cooked through. Set them aside.

For the Sauce:

Drizzle olive oil into a 3 QT SmartSteam™ or large nonstick saucepan and heat the pan over medium heat. Add the pancetta and cook until it is brown and crispy. Remove the pancetta with a slotted spoon and set it aside. Add the onion to the pan, cooking for about 5 minutes until the onion is translucent. Mix in the garlic and red chile flakes and cook for 1 minute, stirring. Pour in the crushed tomatoes. Bring the mixture to a simmer and add the basil, cooked pancetta and sugar. Let it simmer for about 30 minutes. Stir in the Romano cheese and season it with additional salt and pepper if needed.

Cook the pasta according to package directions and drain, and then return the pasta to the pot. Stir the sauce in with the pasta and place it on a serving platter. Top the spaghetti with the meatballs. Serve it with additional Parmesan cheese.
