- 1 cantaloupe, seeded and cut into wedges, rind removed
- 1 English cucumber, thinly sliced
- ½ red onion, thinly sliced
- 3 ounces feta cheese, crumbled
- 3 cups of arugula
- ¼ cup chopped mint
- Juice of a lemon
- 2 tablespoons olive oil
Heat a grill pan or outdoor grill over medium-high heat. Arrange the melon wedges on the grate and grill for about 3 minutes on each side. You are looking to create grill lines and caramelization but not cook the melon to where it becomes soft. Allow the melon to cool slightly.
Arrange the melon, cucumber, onion, arugula, feta and mint on a platter. Whisk the lemon juice and olive oil together. Season the dressing with salt and pepper. Drizzle the dressing over the melon salad and serve.
