Deviled cauliflower platter full featured

Deviled Cauliflower


  • 1 large head cauliflower
  • 1 cup mayonnaise (you can substitute “light”)
  • 3 tablespoons yellow mustard
  • ½ cup finely chopped onion
  • 1 cup shredded sharp cheddar cheese
  • ¼ teaspoon salt
  • Pepper
  • Paprika


Carefully cut out the core of the cauliflower while keeping the florets intact but the head whole (you can cut the cauliflower into large florets if this is easier for you).

Place the cauliflower in an 8 QT SmartSteam™. Add about a ¼ cup of water to the bottom of the pan. Cover the pan with the lid and heat it over medium-high heat until you see the steam being released by the valve. Lower the heat, close the valve and steam for 5 minutes.

In a medium bowl, combine the mayonnaise, mustard, onion, cheese, salt and pepper. Stir to combine.

Remove the lid from the SmartSteam™ and cover the cauliflower with the mayonnaise/cheese mixture. Replace the lid and continue to steam for an additional 10 minutes, or until the cauliflower is fork tender. The majority of the cheese mixture will stay on the cauliflower. Carefully remove the cauliflower (I used two spatulas to lift it out) and transfer it to a serving dish, leaving behind the excess liquid. Garnish with a sprinkling of paprika.
