SmartSteam with baked beans

Chipotle Barbequed Baked Beans


  • 4 cans navy beans, drained and rinsed
  • 2 cans kidney beans, drained and rinsed
  • ½ pound chipotle bacon, or any other bacon, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 cup mustard
  • ¾ cup apple cider vinegar
  • 1 cup ketchup
  • 1¼ cups brown sugar
  • ½ cup molasses
  • 1 cup beef stock or beer
  • ½ teaspoon cayenne pepper
  • Salt
  • ½ teaspoon pepper


Preheat the oven to 400°F.

In a 5 QT SmartSteam™, brown the bacon until it is crispy and cooked through over medium heat. Remove the bacon with a slotted spoon to a paper towel lined plate to drain. Set it aside.

Drain all but about 1 tablespoon of the bacon grease from the pan. Sauté the onions and garlic until they are translucent, about 5 minutes. Add the remaining ingredients, stirring to combine. Turn up the heat and allow the beans to come to a simmer for about 30 minutes. Season them with additional salt if necessary. Add the cooked bacon back to the beans. Place the pan in the oven uncovered for one hour.

Season to taste and serve.
