Cape Cod Baked Beans

  • 2 cups dried navy beans
  • 1 large onion, chopped
  • ½ pound maple flavored bacon, diced
  • ½ cup dried cranberries
  • 2 tablespoon browns sugar
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon dried mustard
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon maple syrup
  • 3 tablespoons molasses
  • ½ cup ketchup

Place the beans in a bowl and cover them with water. Soak the beans overnight. The following day, drain and rinse the beans. Place the beans into 3 QT pan and cover them with water. Simmer for 2 hours, or until they are tender.

Preheat the oven to 325°F.

Sauté the bacon and onions in a Dutch oven until the bacon is cooked and onions are tender. Add the beans to the pan.

In a 2 QT saucepan, combine the remaining ingredients and bring the mixture to a simmer over medium heat. Pour the sauce over the beans, mixing to combine.

Add enough water to the pan to cover the beans. Cover the pan and bake for 3½-4 hours, adding more liquid if the beans start to dry out.
