Basil and lemon grilled chicken recipe

Basil and Lemon Grilled Chicken

  • 4 boneless, skinless chicken breast halves
  • ½ cup fresh basil
  • 2 cloves garlic, minced
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon crushed red pepper flakes

Combine the basil, garlic, lemon juice, olive oil, salt, pepper and red pepper flakes in a bowl. Whisk the ingredients to combine them. Pour the marinade into a sealable bag. Add the chicken to the marinade and allow it to marinate for 2-24 hours.

Heat a steam grill pan over medium heat. Remove the chicken from the marinade, letting the excess liquid drip off. Place the chicken on the pan and cook it for 5-6 minutes. Turn the chicken over and cover the pan with the lid. Cook the opposite side for another 6-7 minutes, or until the chicken is cooked through.

Top the chicken with additional fresh basil if desired.
