Banana Oatmeal Cream Pies


  • 1 cup butter, softened
  • 1 ripe banana
  • 1 cup brown sugar
  • ½ cup sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1 tablespoon molasses
  • 1½ cup flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups quick-cooking oats
  • ½ cup mini chocolate chips
Cream Filling:
  • ¾ cup butter, softened
  • 3 cups powdered sugar
  • 3-4 tablespoons heavy cream
  • 1 teaspoon vanilla
  • ¼ teaspoon salt


Preheat the oven to 375°F.

In a large bowl, combine the butter, banana and sugars. Beat the mixture with an electric mixer until the butter is light and fluffy, about 2 minutes. Add the egg, vanilla and molasses. Mix again to combine the ingredients.

In a medium bowl, combine the flour, baking soda, salt and cinnamon. Slowly mix it into the creamed mixture. Stir in the oats and chocolate chips.

Using a small ice cream scoop (about 2 tablespoons), scoop the dough onto parchment lined large baking sheets. Bake the cookies for 13 minutes, or until they are just golden on the edges. Let the cookies rest for 3 minutes before moving them to a rack to cool.

For the Filling:

Using an electric mixer, beat the butter for 1 minutes until it is creamy. Slowly add in the sugar, salt, vanilla and 3 tablespoons of cream. Mix it on high for 3 minutes until it is light and fluffy, adding more cream if the mixture is too thick.

To Assemble:

Spread the filling on the bottom side of half of the cookies and top them with another cookie.
