Bacon Jam

Ingredients

  • 1 pound bacon, chopped
  • 1 small onion, minced
  • 4 cloves garlic, minced
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • ½ cup strong brewed coffee
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon stone-ground mustard

Instructions

Cook the bacon in a large skillet until the bacon is browned and crispy. Remove the bacon with a slotted spoon to a paper towel lined plate to drain. Discard all the drippings except a tablespoon or so. Sauté the onion and garlic over medium-low heat for 5 minutes. Return the bacon to the pan and add the remaining ingredients. Cook over medium heat for about 30 minutes or until a thick, jam-like consistency is reached.
